7,8,9 Layer Dip

Comments or Information: .

1st layer
1 can refried beans mixed with 1/2 cup your favorite salsa (you may have to warm up just a bit to get it to spread on the bottom)

2nd layer
1 pound ground beef, browned mixed with taco seasoning according to package directions

3rd layer
your favorite guacamole

4th layer
8 ounces sour cream

5th layer
1 cup favorite cheese or cheeses, shredded

6th layer
lettuce, to cover

7th layer
tomato, to cover
8th layer green onions, chopped 9th layer olives

Layer in the order given. Looks nice in a glass dish so you can see the layers. Serve with tortilla chips.


Almond Brickle Fruit Dip

Comments or Information: Christmas, holiday, party.

1/4 cup sour cream, preferably low fat
1/4 cup peach preserves
7 ounces marshmallow crème
1/4 cup almond brickle chips

Combine sour cream preserves and marshmallow crème together. Chill for at least 2 hours, up to 2 days. Stir in brickle chips just before serving. Serve with fresh fruit.


Angels in Blankets

18 slices bacon, cut in half
36 shrimp, cooked and shelled
chili sauce, optional
garlic, optional

Cook the bacon on one side. Wash shrimp well, dry and wrap in half slice of bacon. Secure with toothpicks. Refrigerate, covered, until just before serving. Broil 6 inches from heat for 3-4 minutes. Turn and broil for 1-2 minutes longer.


Armadillo Eggs

24 jalapeno peppers
1 pound pan sausage
2 cups all-purpose baking mix
1 (16 ounce) package Cheddar cheese, shredded
1 tablespoon crushed red pepper flakes
1 tablespoon garlic salt
16 ounces Monterey Jack cheese, cubed

Preheat oven to 325F. Lightly grease a medium baking sheet. Cut a slit in each jalapeno pepper. Remove and discard seeds and pulp. In a medium bowl, mix sausage, baking mix, Cheddar cheese, crushed red pepper, and garlic salt. Stuff jalapenos with the Monterey Jack cheese cubes. Shape sausage mixture around the jalapenos to form balls. Arrange jalapeno balls on the prepared baking sheet. Bake 25 minutes in the preheated oven, until lightly browned.


Asian Chicken Wings

1 pound chicken wings, cut into individual joints
1 cup chicken broth
1/4 cup soy sauce
1 tablespoon sesame oil
1 tablespoon finely chopped fresh ginger
1 teaspoon molasses or brown sugar
1 clove garlic, finely chopped
1 whole star anise*, optional

Place the chicken wings in a large skillet or pot in a single later. Add the remaining ingredients and bring to a boil. Reduce the heat and simmer for 30 to 40 minutes uncovered, until the liquid is reduced to a syrup-like consistency. May be served immediately, or refrigerated and served at room temperature. The flavor improves after a day in the refrigerator. Serves 4 to 6 as a dinner buffet item. * Available in the spice section of finer supermarkets and Oriental specialty shops.
