Almond Oat Squares

2 cups rolled oats
1/2 cup chopped or sliced almonds
1/4 cup oat bran
1/4 cup sesame seeds
Pinch of salt, optional
2/3 cup applesauce or mashed banana
2/3 cup almond butter, at room temperature

Combine oats, almonds, bran, sesame seeds and salt. Combine applesauce and almond butter until well blended, then add to dry ingredients. Pat into a 11x7 baking dish and bake at 300F for about 35 minutes. Score tops of bars while still warm, then finish cutting into squares when cool.


Ayrshire Shortbread

Comments or Information: Scotland.

1/4 pound flour
1/4 pound rice flour
1/4 pound butter
2 ounces sugar
1 egg
1 tablespoon cream

Combine flours, then rub in butter until mixture resembles fine crumbs. Add the sugar, then combine egg and cream and mix into dry mixture. Knead until smooth. Roll out about 3/4 inch thick and cut with a biscuit cutter. Bake on a greased baking sheet at 350F for 10-15 minutes. Dust with sugar after removing from oven.


Banana Split Brownie Pizza

1 package (21 ounce) brownie mix
1/2 cup applesauce
1/2 cup water
1 egg
1 package (8 ounce) cream cheese, softened
1/2 cup powdered sugar
1 banana sliced
1 cup strawberries, sliced
2 tablespoons chopped walnuts
3 tablespoons semi-sweet mini chocolate chips

Preheat oven to 375F. Combine brownie mix, applesauce, water and egg in a bowl. Pour brownie mixture into 9 x 13 cookie sheet. Bake 15-20 minutes or until set. Cool completely. Mix cream cheese and powdered sugar until smooth. Spread over brownie crust. Slice banana and strawberries. Top crust with fruit and nuts. Melt chocolate chips and drizzle over top. Chill. Cut into wedges. Serves 10


Butterscotch Bars

1/2 cup butter or margarine
2 cups brown sugar
2 eggs
1 teaspoon vanilla
2 cups flour
2 teaspoons baking powder
1/4 teaspoon salt
1 cup shredded coconut
1 cup chopped walnuts

In saucepan, melt margarine over low heat. Remove from heat and stir in brown sugar. Add eggs, one at a time, beating well after each. Add vanilla. Add dry ingredients. Add coconut and nuts if desired. Spread in greased 9x13 pan. Bake at 350F for 25 minutes. Cut into 32 bars while still warm.


Butterscotch Peanut Butter Rice Krispy Bars

Comments or Information: .

1 cup butterscotch chips
1/2 cup peanut butter
3 cups chocolate-flavored crisp rice cereal

Melt butterscotch chips and peanut butter together in large pot over very low heat, stirring constantly until smooth. Remove from heat. Add cereal. Stir to coat well. Press into buttered 9-inch square pan. Chill. Remove from refrigerator 10 minutes before serving. Cut into squares.
