Apple Butter Cookies

1/4 cup softened butter
1 cup packed brown sugar
1 egg
1/2 cup quick cooking oats
1/2 cup apple butter
1 cup all-purpose flour
1/2 teaspoon baking soda
1/2 teaspoon baking powder
1/2 teaspoon salt
2 tablespoons milk
1/2 cup nuts, chopped
1/2 cup raisins

In a mixing bowl, cream butter and sugar. Beat in egg, oats, and apple butter. Combine dry ingredients; gradually add to creamed mixture along with the milk; beat until blended. Stir in nuts and raisins. Chill well. Drop by teaspoonfuls onto a lightly greased cookie sheet. Bake at 350F for 15 minutes.


Banana Oatmeal Cookies

1 1/2 cup flour
1 cup sugar
1/2 teaspoon baking soda
1 teaspoon salt
1/4 teaspoon nutmeg
3/4 teaspoon cinnamon
3/4 cup shortening
1 egg, beaten
1 cup mashed bananas
1 3/4 cup rolled oats (oatmeal)
1/2 cup chopped nuts

Combine flour, sugar, soda, salt, nutmeg, and cinnamon. Cut in shortening. Add remaining ingredients.

Mix well. Drop by teaspoonfuls, about 1 1/2 inch apart, on ungreased cookie sheets. Bake at 400F for 15 minutes or until edges are brown.


Butterscotch Cookies

2 tablespoons butter, at room temperature
3/4 cup vegetable shortening
1 1/2 cups dark brown sugar
1 egg
2 tablespoons nonfat dry milk
1 tablespoon vanilla
1 3/4 cups flour
1/2 teaspoon baking soda
1/2 teaspoon salt
1 cup finely chopped pecans

Combine the butter and shortening in a large mixing bowl and beat for a few seconds. Add the sugar and beat until creamy. Add the egg, dry milk, and vanilla and beat until light. Add flour, baking soda, and salt to sugar butter mixture and blend. Stir in pecans and mix well. Drop by heaping tablespoonfuls onto greased cookie sheets. Dip bottom of a glass into flour and use it to press the dough down in a circle. Dip glass in flour after each pressing. Bake at 375F for 7-10 minutes or until golden brown.


Butterscotch Haystacks

Comments or Information: So easy and creamy-crunchy perfection.

11 ounce package butterscotch chips
3/4 cup creamy peanut butter
8 1/2 ounce package chow mein noodles
3 1/2 cups marshmallows

Line baking sheets or trays with waxed paper. Melt butterscotch chips at 70% for 1 minute. Stir. Microwave at additional 10-20 second intervals, stirring until smooth. Stir in peanut butter until smooth. Add chow mein noodles and marshmallows; toss til coated. Drop by rounded tablespoons onto prepared baking sheets. Refrigerate until ready to serve.


Chewy Banana Oatmeal Cookies

1 1/2 cups oats
1/2 cup whole wheat pastry four, oat flour or millet flour
1/2 teaspoon salt
1/4 teaspoon baking soda
Dash of ground cinnamon
2 tablespoons chopped nuts or raisins
2 medium bananas, mashed (about 1 cup)
3/8 cup oil

Combine oats, flour, salt, baking soda and cinnamon. Combine bananas and oil, then add to the dry ingredients. Drop by heaping teaspoons on an ungreased baking sheet. Bake at 350F for 10-15 minutes. Makes about 24 cookies.
