Alabama Style Corn Pone

2 cups white cornmeal1 teaspoon salt
1/4 teaspoon baking soda
4 tablespoons lard
3/4 cup boiling water
3/4 cup buttermilk, approximately
Sift dry ingredients into a bowl, then add lard and work in with fingers. Add boiling water and continue to work mixture together. Pour in just enough buttermilk to make a soft dough that can be molded. Pat into 5 or 6 small flat pones and place in a hot, greased iron skillet. Bake at 350F for 40 minutes.
Bacon and Cheese Cornbread

1/2 cup yellow cornmeal1 1/2 cups milk
2 eggs, beaten
1/4 cup butter or margarine, softened
1/4 teaspoon salt
3 teaspoons baking powder
1/4 teaspoon crushed red chiles, optional
1 cup (6 to 7 oz) shredded sharp Cheddar cheese
5 slices bacon, cooked
Heat cornmeal and 1 1/4 cups milk over medium heat until thick and dry, stirring frequently, about 3 minutes. Spoon cornmeal mixture into a bowl. Add remaining milk, butter and eggs. Beat until smooth. Stir in salt, baking powder and red chiles, if used. Stir in cheese and bacon. Pour into a casserole dish or cake pan. Bake at 325F for 35 minutes or until cooked through.
Banana Bread
Comments or Information: An old classic.
1/2 cup shortening1 cup sugar
3 tablespoons sour milk
3 bananas, mashed (12oz)
1 teaspoon baking soda
2 eggs
2 cups flour
1 pinch salt
Combine all ingredients. Place in greased loaf pan and bake at 325F for 1 hour.
Banana Date Bread

2 1/2 cups sifted flour1/2 teaspoon salt
2 teaspoons baking powder
1/4 teaspoon baking soda
1/2 teaspoon ground ginger
1/4 teaspoon ground mace
3/4 cup light brown sugar
1/2 cup chopped walnuts or pecans (packed)
2 eggs, lightly beaten, at room temperature
1/4 cup buttermilk at room temperature
3/4 cup butter, melted and cooled
1 cup pitted dates, snipped
1 cup ripe bananas (about 3) mashed
Preheat oven to 350F. Grease a large (9x5-inch) loaf pan. Sift together first 6 ingredients. Stir in sugar and nuts. In separate bowl, mix remaining ingredients. Add to dry ingredients; mix until all dry ingredients are moistened. Pour into prepared pan; bake one hour. Let cool in pan five minutes, then remove to wire rack to cool completely.
Banana Mango Bread

1 cup butter1 1/4 cup packed brown sugar
3 eggs
3 cup self-raising flour
1/2 teaspoon salt
1/2 teaspoon cinnamon
1/4 teaspoon grated fresh nutmeg
1 1/2 cup mashed ripe bananas
1 small ripe mango
1 cup golden raisins
1/2 cup chopped walnuts
In a bowl, cream the butter with sugar until fluffy; beat in eggs, one at a time, until incorporated. In another bowl, combine self-raising flour with salt, cinnamon and nutmeg. Combine mashed bananas with mango puree. Mix the dry ingredients and banana mixture, alternately, into the creamed mixture until batter is just combined; fold in raisins and nuts. Pour batter into 2 greased 8 1/2 by 4 1/2 inch loaf pans. Bake at 350F for 50 - 60 minutes or until cake tester inserted in the centre tests done. Leave in pan for 10 minutes; remove form loaf pans and let cool on racks. Makes 2 loaves.
