Armadillo Eggs

24 jalapeno peppers
1 pound pan sausage
2 cups all-purpose baking mix
1 (16 ounce) package Cheddar cheese, shredded
1 tablespoon crushed red pepper flakes
1 tablespoon garlic salt
16 ounces Monterey Jack cheese, cubed

Preheat oven to 325F. Lightly grease a medium baking sheet. Cut a slit in each jalapeno pepper. Remove and discard seeds and pulp. In a medium bowl, mix sausage, baking mix, Cheddar cheese, crushed red pepper, and garlic salt. Stuff jalapenos with the Monterey Jack cheese cubes. Shape sausage mixture around the jalapenos to form balls. Arrange jalapeno balls on the prepared baking sheet. Bake 25 minutes in the preheated oven, until lightly browned.


Bacon Roll-Ups

1/4 cup butter or margarine
1/2 cup water
1 1/2 cups cornbread stuffing mix, mixed with half of vegetable seasoning packet
1 egg, slightly beaten
1/2 pound pork sausage
1/2 pound bacon

Melt butter in water. Remove from heat, stir in stuffing, egg and sausage, and chill about an hour. Shape into small oblongs about the size of pecans. Cut bacon strips into thirds. Wrap one piece around dressing mixture and fasten with toothpick. Place on baking sheet and bake at 375F for 35 minutes or until brown, turning once. Drain and serve.


Barbecups

3/4 cup ground beef
1/2 cup barbecue sauce
1 tablespoon instant minced onion
2 tablespoons brown sugar
1 (8 ounces) can refrigerated baking powder biscuits
3/4 cup shredded Cheddar cheese

In a large skillet, brown ground beef, drain grease Add barbecue sauce, onion and brown sugar. Set aside. Separate biscuit dough into 12 biscuits. Place one biscuit in each of 12 muffin cups, pressing dough up sides to edge of cups. Spoon meat mixture into cups. Sprinkle each cup with cheese. Bake at 400F for 10 to 12 minutes or until golden brown.


Black-Eyed Bean Fritters

1 1/4 cups black-eyed beans
1 teaspoon baking soda
3 cloves garlic
Salt
Oil for frying

Soak the beans overnight in water and the baking soda. Drain the beans, wash and rub them between your hands to remove skins. Crush the peeled beans in a blender with the garlic and salt. The mixture should be creamy. Pour into a bowl and whisk for 10-15 minutes. You can also add an egg and yeast at this point to ensure that beans expand when fried. Heat the oil in a skillet. Add spoonfuls of the mixture to the hot oil and fry on both sides until golden brown. Drain and serve.


Breakfast Deviled Eggs

12 hard-cooked eggs, peeled
1/2 cup fat free plain yogurt
1/4 teaspoon salt
1/8 teaspoon pepper
1/3 cup cooked, crumbled bacon
1/4 cup parsley -- chopped

Cut in eggs in half lengthwise. Mash yellow yolk and mix with yogurt, salt and pepper. Pipe yellow mixture back into shells. Garnish with cooked, crumbled bacon and chopped parsley. Refrigerate until ready to serve.
