Bacon Cheese Spread
Comments or Information: Christmas.
12 ounces bacon, chopped1/2 cup pecans or almonds, chopped and toasted
4 cups sharp cheddar cheese, shredded
2 cups mayonnaise
1 small onion, chopped
2 tablespoons finely chopped sweet red pepper
1/8 teaspoon cayenne pepper
Crackers, for serving
Cook bacon until crisp and drain. Mix with rest of ingredients and serve with crackers.
Chocolate Chip Cheese Ball
Comments or Information: .
8 ounces cream cheese, softened1/2 cup butter, no substitutes
1/4 teaspoon vanilla
3/4 cup powdered sugar
2 tablespoons brown sugar
3/4 cup mini-chocolate chips
3/4 cup pecans, finely chopped
Beat cream cheese, butter and vanilla until fluffy. Gradually add sugars and beat just til combined. Stir in chocolate chips. Cover and refrigerate for 2 hours. Place cream cheese mix on large piece of plastic wrap and shape into a ball. Refrigerate for at least 1 hour. Just before serving, roll the cream cheese ball in the pecans. Serve with graham crackers.
Corned Beef Spread

1 can corned beef1/2 cup chopped onion
1/2 cup chopped dill pickles
3 hard cooked eggs
1/2 cup mayonnaise
Lightly warm corned beef. Add remaining ingredients; mix well. Chill before serving. This spread is tasty served with crackers or as a sandwich spread.
Cucumber Cheese Spread

1 medium cucumber, peeled, seeds removed and cucumber grated1 tablespoon finely chopped onion
2 tablespoons mayonnaise
12 ounces soft spread cream cheese
Dash or two of hot pepper sauce
Put grated cucumber into a strainer with double layer of cheesecloth. Place strainer over a bowl and refrigerate for an hour. Lift cheesecloth from strainer and wring out as much liquid as possible from the cucumbers inside cheesecloth. Combine all ingredients.
Pecan Covered Clam Roll
Comments or Information: .
12 ounces clams, drained and minced1 tablespoon lemon juice
1 teaspoon mustard
1 teaspoon Worcestershire sauce
2 tablespoons fresh parsley, chopped
2 tablespoons onion, finely chopped
2 ounces pimentos, drained
1/3 cup saltines, crushed
16 ounces cream cheese, softened
1/2 cup pecans, chopped
Combine all ingredients except for pecans. Form into a ball or log and roll in pecans until completely covered. Refrigerate several hours. Bring to room temperature and serve with crackers.
