Ingredients List
  • 1 cup honey
  • 1 cup peanut butter (I like chunky)
  • 1 box (3.4 oz) JELL-O Vanilla Instant Pudding
  • 1 1/4 cup oatmeal (quick cooking oats)
  • 1/2 cup flaxseed meal
  • 1/3 cup whole almonds, roasted and salted
  • 1/3 cup peanuts, salted
  • 1/3 cup dried pineapple, cut in bite size pieces
  • 1/3 cup dried mango, cut in bite size pieces
  • 1/3 cup dried cranberries

How to Make

Line 9x9 pan with wax paper leaving extra on two sides so you can lift the bars out of the pan. In a large mixing bowl, combine honey and peanut butter. Mix by hand until combined. Add pudding, oatmeal, flaxseed. Stir until combined. Add nuts and fruit. Stir until combined. Put mixture into pan and press down with wax paper to level bars. Refrigerate for 30 minutes. Lift wax paper out and cut bars on cutting board. Cut into 16 squares or any size shapes you like. Individually wrap bars and store in refrigerator or freezer.

The Story Behind the Recipe

These bars are perfect for breakfast, snack, or dessert. They are great to eat on the go or for a quick burst of energy for the kids after school or before sports, dance, band…. The vanilla pudding adds a delightful flavor.
